I was thinking that an fun project would be to do the Conway's Game of Life kits[1] from adafruit. It's a really easy build, plus we can hook them all up when we're done to create a giant Game of Life board. Thoughts? Maybe you could work it out with AS220 to leave the giant board up (in a window preferably) for a few days after the build (write your names on the back with a Sharpie so you can recover the one you built later).
